     Stuffed Basil pan Cakes

Ingredients for the Batter


1/4 cup whole wheat flour
1/4 cup
 plain flour
1/4 cup
  milk
salt to taste

ingredients For The Stuffing
1 tsp  butter
1/4 cup
 chopped onions
1 tsp
 finely chopped garlic
1/2 cup
 chopped tomatoes
3/4 cup
 Chopped Basil
2 tbsp
 grated mozzarella cheese
salt to taste
1 tsp
 oil for cooking



Method For the batter


·         Combine all the ingredients in a bowl along with ½ cup water and mix well to make a smooth batter. Keep aside.

Method For the stuffing

·         Heat butter in a non-stick pan, add the onions and garlic and sauté on a medium flame for 2 minutes.
·         Add the tomatoes and sauté on a medium flame for another 3 to 4 minutes.
·         Add the Basil and sauté on a high flame for 2 to 3 more minutes
·         Remove from the flame, add the cheese and mix well. Keep aside.
       Heat a non-stick pan, pour a ladleful of the batter and tilt the pan around quickly so that the battercoats the pan evenly.

·         Cook the pancake on both the sides using ¼ tsp of oil for 30 seconds approximately.
·         Remove the pancake on a plate and spread ¼th of the stuffing on one edge.
·         Fold the pancake to make a semi-circle and press it lightly.
·         Repeat with the remaining ingredients to make 3 more stuffed pancakes.

·         Serve immediately.
